Behind the Brews

Civic Brewing Co. is brought to life by the community in and around Wakulla County, Florida. Civic has found a home in downtown Sopchoppy, in a building that was originally a pharmacy, then years later restored to become a pizza place and restaurant.

Elliot Seidler is the owner and brewer behind the beer. A Wakulla native and former Navy aviation rescue swimmer, Elliot completed the Master Brewers program at UC Davis in 2019. After traveling the world and gaining an appreciation for a good bitter in Britain, a clear kolsch in Germany, and a crisp rice lager in Japan, it was time to bring the brews home and Civic Brewing Co. opened its doors in 2021.
